Bok Choy is a leafy green vegetable that is in the same family as broccoli and cabbage. It has a taste that is similar to spinach, but a little bit stronger. This leafy green is great in stir-fries or on the grill, but not many would think to add it to a smoothie! Adding leafy greens to a smoothie can be a great way to add more vegetables into your diet. Bok Choy is especially nice in smoothies because its flavor is not too over-powering or bitter.
- 1/2 Bok Choy, leafs and stems chopped
- 1 apple, cored and cut into small chunks
- Juice from 1/2 lemon
- 1 orange, peeled
- 1 cup of water
- 2 to 3 ice cubes
- Add all ingredients to blender.
- Blend until all ingredients are combined and smooth.
Note: This recipe is very pulpy! If pulp is not your thing, you can strain the juice from the pulp or juice these ingredients instead of blending them. If you like a little spice, add a small piece of ginger.
