Radish & Cucumber Salad
On a hot summer day, this salad will cool you off, while adding some exciting flavor to your meal! This makes a great side dish, or double the recipe and bring it to your next BBQ or picnic.
INGREDIENTS (makes 4 servings)
2 cucumbers, cut into a large dice
6-8 radishes, shredded
1 Tablespoon olive oil
1 Tablespoon apple cider vinegar
1 Tablespoon maple syrup or honey
Salt and pepper
In a medium bowl, mix the oil, vinegar and syrup (or honey) in a bowl. Add a sprinkle of salt and fresh cracked black pepper, to taste, then whisk thoroughly. Add the cucumbers and toss several times to coat with the dressing. Add the radishes and toss lightly, then serve.
