Here’s one from Farmer Kyle’s own kitchen: Roasted Radishes with Radish Greens.
2 bunches small/medium size radishes with greens attached
2 cloves garlic-diced
Small onion diced (about 1/2)
2 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons fresh lemon juice
Preheat cast iron pan or skillet. Trim the radishes; remove and wash the greens, then pat dry.
In pan, heat the oil until shimmering. Cut radishes in half and add them in, season with salt and pepper and cook over high heat, stirring occasionally, until lightly browned in spots, about 2-3 minutes.
Add onions, garlic, butter or more oil and stir in. Right after, add in the greens and lemon juice, then cover for about 2 minutes. Stir the dish a few times, incorporating the greens until they are wilted. Serve immediately
